Some of the best meats in the city, this is not a place to bring a vegetarian friend anywhere near. There really are no veggie-friendly options here; even the caesar is crowned with a stick of pepperoni.

The meats are high quality, well seasoned, and well cooked. The lunch special is super hard to beat, and the selection of drinks is top notch.

My favorite menu item is the Italian Bar Snacks. Essentially cured pork sticks. Better than bacon.

The food was spectacular. We had the white bean hummus, sourdough bread, Brussels sprouts, and steak. The attention to detail was unreal. All the flavours complimented each other perfectly.

Raven was our server and she was really friendly! The service at the restaurant was outstanding.

We will be coming back for sure.

Went for a company lunch. Was amazed with the quick service. Perfect portion sizing and delicious food. I will definitely come back, especially for those warm cookies. I had to share my cookies with someone and I was pretty sad. Next time, no sharing!

Nice place for a different steak. They served medium rare beef prime ribs, it was tasty and the sauces and roasted garlic completed the dish. But the star for me was the tomato salad! The dressing and seeds made it taste so delicious!!

One of my top 10 restaurants in Calgary. One of my top 2 places for lunch. The food quality is outstanding, and the prices are very reasonable. If you do go for lunch, I would highly recommend the 'lunch all at once' if it's your first time. I think it's 16 bucks and what you get is incredible! And massive! Enjoy!

Worst steak I've had in years. Precut, dry undercooked. Ordered medium and it came cooked on the outside and extremely rare on the inside. NO JUICE and tough sinewy. Didn't even look like beef, it was pale in colour, closer to a pork colour. Oh, and NOT hot. Salty potato soup also. Good thing I was not there for the food.

We went there during a layover in Calgary. The service was great, the drinks were excellent and the food was amazing! Our server helped us choosing cause we wanted everything on the menu. It was perfect!

Last night will definitely be our last!
This is a restaurant my husband and I have counted as our special 'Go to' in Calgary. It was our third visit and after our experience with our prior occasions we found this a huge disappointment. Wow, what happened to the 'Top Notch'

At 1:30pm we left a message to book a table at 6pm for 2 people. We never received a call back so rang the restaurant back at 5:30pm to see if we had a table. After telling the Hostess our name and details, she said there was only availability at the bar, however if we were finished by 8:00pm we could be seated at a table. I assured her we would be finished and because we were already in Downtown Calgary we arrived at 5:45pm. (Please Charcut, it is just common courtesy to callback a customer when requesting a booking) Our seating arrangement was within elbow distance of the next couple, 3 couples in a row. When they went to seat a 4th couple, the people refused the seating and asked to be at a more intimate setting.

Our waitress found it hard to crack a smile, pour a beer and gave my husband a dirty glass after he asked for a second beer. Instead of making a fuss about the glass he wiped it clean with his serviette. I know my husband is a generous tipper and has been in the past at Charcut. I don't think he was this time around.
There was a favorable point about our server. My 2nd $14.00 cocktail was not as nice as the first one, she happily had it remade for me.

For food our starter was the cured meat platter and some sour dough bread. My suggestion is to get some greens with it. The cured meat is one of my husbands favorites. For Entree we had the Bison Brisket and Slow Cooked Lamb. Both dishes were not up to standard. My lamb shank was sinewy and fatty. Yes, it fell off the bone, but into a tomato/feta slosh.

There is a positive...another restaurant will now be getting our hard earned money.

The bison brisket!!! This dish is entirely worth the visit. It is rich, but delicious. The atmosphere is very trendy, but relaxed. Craft beers and signature cocktails are plentiful. Service is usually very good, but you may have a tough time to get a table without a reservation.

The lunch specials are amazing. Soup, sandwich, duck-fat fries, and cookies, in and out in 45 min, for less than $20. And the Soup & Sandwich change daily. And that's only one of the lunch specials. There's a pasta special, and a fancy one too.

For dinner the menu changes to draw crowds in from around town, and a higher end clientele.

During the day it's a younger demographic from financial bankers to entrepreneurs where time is the commodity, and dinner the restaurant becomes a hub for people from all corners of the city.

Connie & John are friendly and approachable as the celebrity chefs, and the staff is amazing. Friendly and fast! They know all the bear and wine, and can make appropriate suggestions.

Great place for lunch (and I am guessing supper). The lunch menu is wonderful and the cookies and coffee to go is a great end to any meal! Food has always been great and service is always friendly.

Delicious. I've been meaning to try this place for years having watched top chef Canada and it didn't disappoint. The meats were amazing and so were the sides. A nice ambiance too. Great for a Friday night outing.

Came here for Valentines Day. I ordered the octopus appetizer and the steak with brussel sprouts and potato as my main. The food was incredible! The octopus was tender and well seasoned. The steak was like butter - it was so tender and juicy. Perfect! I would definitely come here again. Despite being incredibly busy, we didn't feel rushed or ignored. Server was very attentive.

Didn't gave this place a high rating probably because the expectation was too high to begin with. Known for dry aging their meat in house, if you are thinking of tradition steak house.. this place may not be right for you. Food is not bad IMO. I can see some creativity out into the dishes. Great atmosphere definitely a good place to hang out with a couple of friends for a drink.
