Sweet Potato Casserole - Serves 8
3 cups cooked mashed sweet potatoes (about 2lbs); 1/2 cup granulated sugar; 2 eggs; 1/4 cup butter (softened); 1 tsp vanilla; 1/4 tsp salt.
1/4 cup butter or margarine; 1/2 cup brown sugar (packed); 1/4 cup all-purpose flour; 1/2 cup chopped pecans.
... Mix first 6 ingredients together. Put into 2 quart (2 L) casserole.
Melt butter in small saucepan. Add brown sugar, flour, and nuts. Stir well. Sprinkle over top of ingredients in casserole. Bake uncovered in 350 degrees Fahrenheit oven for about 30 minutes.
Variation: Add 1/2 tsp each of cinnamon and nutmeg to first 6 ingredients. Hot or cold you will think you are eating dessert.
