The Road I'm On - is basically my journey for a better version of myself, not just physically, mentally and spiritually as well. I struggle with gaining weight over the past couple of years and working on getting back to where I was and to be the person I was meant to be. It's a struggle, anyone who has been down this road, knows that. Cravings, life, work, stresses get in the way and you put yourself at the bottom of the list of things that are important.

I've been on different paths since I started my Facebook Page back in 2016, I lost some weight, gained it back and hit "restart" recently. I realize who I want to be and what I can achieve when I just focus on myself a little.

Low Carb Bagels 🥯
Ingredients 3 cups mozzarella cheese 2 oz cream cheese... 1 3/4 cup almond flour 2 large eggs 1 Tbsp baking powder 3 tablespoon everything seasoning
Instructions Preheat oven to 350°. Line a baking sheet with parchment paper Add mozzarella and cream cheese in a large bowl. Microwave for two minutes or until cheese is melted. Remove from microwave and stir until fully combine. Immediately add almond flour, eggs, baking powder. Stir to combine until the flour and eggs are well mixed with the cheese. If dough is sticky knead with hands until no longer sticky add cold water to hands if needed. Divide dough into each equal portions shape each portion into bagel shape and place on baking sheet. Fake 15 minutes and then broil for one minute to get the top golden brown.

Keto ham and cheese
INGREDIENTS 3/4 cup shredded mozzarella cheese. 1/2 cup shredded cheddar cheese.... 1/2 cup grated parmesan , or asiago, other hard, dry, grated cheese. 1 cup diced ham 2 eggs
INSTRUCTIONS Preheat oven to 375 degrees Fahrenheit. Combine the shredded cheese and egg in a bowl and mix it until the ingredients are fully combined. Stir in diced ham and mix to combine. Set out a well prepped baking sheet - greased or lined with parchment or a silpat. Divide the mixture equally into six to eight parts and form into round rolls. Bake at 375 degrees for about 15 to 20 minutes until the cheese has fully melted and created a slight brown crust.
Feel free to mix up your cheese selection - but stick with one grated hard, dry cheese (like parmesan or asiago) to keep the flour-like texture.

🍕Keto Pizza- Grilled Chicken and Spinach Recipe
Are you following the keto way of eating? Then you HAVE to try this white keto pizza! Cheesy, satisfying greatness and only 2.5 carbs per serving!
Course Main Course... Cuisine American Prep Time 15 minutes Cook Time 15 minutes Total Time 25 minutes Servings 2 People Calories 345 kcal Ingredients 1 boneless skinless chicken breast 1/2 tablespoon Olive oil 1 clove garlic minced 1/2 cup half & half or heavy whipping cream I used half & half, nutrition facts will change if using something else 1/4 tsp xanthan gum thickener found near the yeast or sweetener aisle This comes in a small packet like yeast and is only about 40¢ 1 cup fresh spinach roughly chopped 1/2 cup part skim shredded mozzarella Sea salt & pepper to taste
FOR THE FATHEAD DOUGH: 2oz cream cheese 3/4 cup shredded mozzarella 1 egg, beaten 1/4 tsp garlic powder 1/3 cup almond flour
Instructions: To make the pizza crust: Melt mozzarella and cream cheese in the microwave for 30 seconds at a time. Mixing often. In a separate bowl mix beaten egg with almond flour and remaining dough ingredients. Combine cheese mixture with flour and mix. Mix. Keep mixing! Once a sticky dough consistency has been reached, refrigerate while preparing sauce and chicken. Saute the chicken in a skillet over medium heat until done. Remove, set aside. Add garlic plus the xantham gum with half & half to the skillet and bring to a boil. Reduce to simmer when sauce starts to thicken. Fold in spinach, cook just until wilted. Using hands, work dough out into a circle on a pizza pan. Bake on 350 for 10 minutes. Crust must be pre-baked to hold up to the sauce and toppings. Spread sauce/spinach mixture onto your cooked pizza crust. Top with chicken and shredded cheese Bake 5 minutes or until cheese is melted.
NOTE* if your oven and pizza crust wasn’t already hot from making the dough, bake for 10 minutes instead. Allow to cool a few minutes. Cut into 4 pieces. Serves 2
